Quite simply this is the most flavoursome and beautiful cut of beef that seems to have been lost through years gone by.
Slow cook at 80 to 100 degrees c all day to release the flavour and tenderness i would honestly say if you you have the time this joint would challenge the carvery fore rib with out the price tag. undoubtably one of my favourites.
